Our People
Geoff Wilson, Principal
Geoff
Wilson has 13 years of operations and marketing experience in the Canadian
foodservice industry. He led the foodservice consulting practices at
PriceWaterhouse and KPMG before starting his own practice in 1999. Geoff
has been providing strategic business advisory services to clients throughout
the entire foodservice supply chain since 1989. His specialties include
attractions, institutions, chain operators and supply chain.
Bill Dover, Principal
Bill
Dover is a seasoned foodservice operator with over 30 years of operations
experience. He held senior leadership positions at General Mills Restaurants
(Red Lobster/Olive Garden), Cara Operations, and Fat Albert’s.
Bill opened his consulting practice in 1992. Bill is a Past Chairman
of the Canadian Restaurant and Foodservices Association and Past Chairman
of the Canadian Hospitality Foundation. He is also a Past International
Director of the National Restaurant Association in the United States.
Andrew Waddington,
Associate
Andrew
is a multi-talented consultant with strengths in culinary, facilities
design and research. Andrew undertook his culinary apprenticeship through
George Brown College and is a graduate of the Culinary Institute of
America. Andrew held culinary roles at several high-end restaurants,
hotels, and private caterers in Canada and the United States, including
periods in Texas, New York, and California. He was also a design associate
with Cini-Little International, Inc. in California.
John Zemiar,
Associate
John Zemiar possesses a hands-on knowledge of the food and beverage
industry with over forty years experience. He has intimate knowledge
of the issues involved in the licensing of establishments for the
service of beverage alcohol. Prior to working as an inspector for the
Liquor License Board of Ontario (now the Alcohol and Gaming Commission), John held regional and district management
positions with Canterbury Food Ltd. (Crock 'N Block Restaurants, and
Guadala'Harry's Mexican Restaurant) as well as Regional Director Status for
Consul Corporation (Chi-Chi's Mexican Restaurants).

Our History
fsSTRATEGY is an alliance of senior consultants specializing in the
foodservice industry. The alliance was established in 2002 as a result
of the growing collaboration of Geoff Wilson and Bill Dover on projects.
The principals recognized the need for full-service consulting firm
specializing in foodservice and offering a wide variety of expertise
to the entire supply chain – growers, processors, distributors
and operators. Geoff and Bill now work together on approximately 80
per cent of their client projects.
fsSTRATEGY has an extensive network of sub-consultants with expertise
in facilities design, culinary, sensory testing, dietetics, market research,
food processing plant development, retail food, marketing, human resources,
mergers and acquisitions, etc.
While based in Canada, the principals of fsSTRATEGY have provided consulting
services to foodservice clients in the United States, Europe, South
America, Africa and Australia.
Our Organization
fsSTRATEGY is a virtual consulting alliance. Each Principal and Associate
has his or her own company. We bring the right blend of expertise together
to respond efficiently to specific client needs. On a project-by-project
basis, one of our team members fills the role of lead consultant and
the rest are sub-consultants. This allows us to bring together the right
blend of skills and experience for each situation and minimizes overhead
costs, resulting in high value for our clients.
